The Coziest Vegan Strawberry Crisp for the Last Days of Strawberry Season...

Strawberry season never seems quite long enough, but picking strawberries is one of my favorite summer activities. There's something meditative about discovering and plucking one little gem at a time.
As the days have gotten longer and warmer, I've been craving a simple, unfussy dessert thatās perfect after an afternoon spent reading outside or an easy evening with friends. Something Anne Shirley or the March sisters might happily serve after returning home with berry-stained fingers.
This crisp became my way of celebrating those last sweet berries!

*To make this vegan, I substituted Earth Balance butterĀ for the butter. Mine did turn out a little salty, so I'd recommend using a light hand with the salt!

Sweet, cozy, simple, and wonderfully summery. Makes the house smell like toasted oats and sunshine. Iād absolutely make it again, but probably a mixed berry variation.
Donāt Skip
š The lemon zest.
It brightens the strawberries without making the dessert taste lemony and gives the whole crisp a fresher flavor.
Next Time Iād Try...
Mix in blackberries and blueberries for a mixed berry version.
Add a handful of cherries again ā the added sweetness was lovely!
Bake another 5ā10 minutes uncovered so the topping browns even more.
Serve warm with plenty of coconut whipped cream or vanilla ice cream.
